Aapam is a unique Kerala breakfast dishes. It comes under the same family of “Dosas” except Aapam will have a thick spongy centre but thin and crispy edges. It’s usually made in a special “Aapam chatti/Kadai”. We didn't have one at home so decided to make it like a dosa.

- Rice powder-3 cup
- Coconut-1/2 grated
- Yeast-1/2 tbsp
- Salt to taste
- Sugar-1 tbsp
The preparation method:
- Mix the rice powder with enough water, finely grinded coconut,yeast,salt and sugar. Use a blender to mix them well.
- Keep aside for at least 8 hours ( ideally overnight). This will allow the yeast to ferment the rice and coconut mixture.The resulting batter will be sweet and sour.
- Pour the batter in Aapam chatti or dosa pan and fry it up like a dosa.
- Yummy Aapam is ready to be served hot any spicy curry - especially vegetable stew.
