Aapam

Aapam is a unique Kerala breakfast dishes. It comes under the same family of “Dosas” except Aapam will have a thick spongy centre but thin and crispy edges. It’s usually made in a special “Aapam chatti/Kadai”. We didn't have one at home so decided to make it like a dosa.


What you need for Aapam:
  • Rice powder-3 cup
  • Coconut-1/2 grated
  • Yeast-1/2 tbsp
  • Salt to taste
  • Sugar-1 tbsp
The preparation method:
  • Mix the rice powder with  enough water, finely grinded coconut,yeast,salt and sugar. Use a blender to mix them well.
  • Keep aside for at least 8 hours ( ideally overnight). This will allow the yeast to ferment the rice and coconut mixture.The resulting batter will be sweet and sour.
  • Pour the batter in Aapam chatti or dosa pan and fry it up like a dosa.
  • Yummy Aapam is ready to be served hot any spicy curry - especially vegetable stew.
