Baingan Peanut curry

Baingan Peanut curry is a rich Hyderbadi dish which has shallow fried brinjals simmered in coconut-peanut gravy. This is a good combination with any Indian bread and rice dish.


What you need for Baingan Peanut curry:
  • Baingan-1 big cut into small pieces or 4 small slit
  • Peanut-1 cup
  • Seasame seeds-1/2 cup
  • Coconut grated-1 cup
  • Onion-1 chopped
  • Fenugreek seeds-very little ( else the curry will turn bitter)
  • Cumin-1/2tbsp
  • Mustard seed-1/2tbsp
  • Tamarind-1 small ball soaked in water
  • Curry leaves-few
  • Whole Garam masala- a few pieces of cardamom,clove,cinnamon,bay leaf.
  • Jaggery-1 small piece
  • Cumin powder-1/4 tbsp
  • Chilli powder-1/2 tbsp
  • Coriander powder-1 tbsp
  • Turmeric powder-a pinch
  • Ginger garlic paste-1 tbsp
  • Salt to taste
The preparation method:

  • Heat oil in a pan and cook the brinjals with some salt till well done and soft. Keep aside
  • Roast the peanuts and sesame seeds in little oil till sesame seeds crackle and the peanuts are well done.
  • Switch off the flame and fry the grated coconut in the hot pan with the heat off. Coarsely grind this together with little water. 
  • Heat oil in a pan and add the whole garam masalas(cardamom,clove,cinnamon,bay leaf) and mustard seeds. Fry till the mustard seeds splutter. Crackle cumin seeds and very little fenugreek seeds.
  • Add chopped onion with salt and sauté till the onions turn slightly brown.
  • Add little hing ,curry leaves,turmeric powder ,ginger-garlic paste and fry some more.
  • Add little water and add 1/2 tbsp of cumin powder , 1 tbsp coriander powder and 1/2 tbsp of red chilli powder.Mix well and bring it to a boil.
  • Add our grinded mixture to this and keep stirring till it gets well mixed with the rest of the gravy.
  • Cook till the oil oozes out. Add the tamarind juice to this.
  • Add the jaggery and little salt if needed. 
  • Add our fried brinjal to this.Mix well and cook for 1 more minute.
  • Garnish with coriander leaves.
  • Yummy Baingan Peanut Curry is ready to served with Indian bread or rice.
