Kerala Vegetable Stew is a healthy and delicious stew popular in God's own country made by cooking mixed vegetables in a mild coconut milk gravy .This goes great with aapam,idiyappam or any Indian bread.

- Carrot-1 chopped
- Potato-1 chopped
- Beans-10 chopped
- Green peas-1 cup
- Onion-1 chopped fine
- Ginger-1 piece chopped
- Green chilli-2 slit
- Whole Garam masala-a few pieces of cloves,cardamom,bay leaf and cinnamon
- Pepper powder-2 tbsp
- Coconut milk-1 cup
- Salt to taste
The preparation method:
- Heat oil in a pan and add whole garam masalas.
- Add chopped onion,ginger and green chilli.
- Saute for sometime then add vegetables and salt
- Boil the vegetables with enough water and cook till its done.
- Then add pepper powder.
- Finally add coconut milk ansd switch off the gas.
- Tasty and healthy Vegetable Stew is ready to be served hot with appam,idiyappam or Indian bread.
