Potato Egg Curry

We wanted to try a different egg recipe and we found this recipe online. We tried this and found it to be very simple and good to taste too. This egg curry goes well with chappatis.


What you need for Potato Egg curry:
  • Potatoes - 500 g  diced
  • Eggs - 4, hard-boiled
  • Onions - 1 , chopped
  • Ginger - 1 small piece chopped
  • Tomatoes - 2 , chopped
  • Green chilli - 1 or 2
  • Turmeric - a pinch
  • Coriander  powder - 1 tbsp  
  • Red chilli powder  - 1/2 tbsp 
  • Salt to taste
The preparation method:
  • Heat the oil in a pan; add onions and saute till light brown. .
  • Add ginger,green chilli and tomatoes; saute. Mix in all the dry spices and saute for some time.
  • Add the potatoes, eggs, and water. Cook till the gravy thickens and the potatoes are fully cooked.
  • Serve hot with chappatis.
