Egg Stew

Try this tasty and easy Poached Egg Stew if you are bored of the usual egg curry and want to try something different.

What you need for Egg stew:
  • Egg - 4 boiled
  • Onion - 1 thinly sliced 
  • Green chilly - 2 slit
  • Ginger garlic paste - 1tbsp
  • Whole Garam masala - 1piece each (cloves, cardamom,bay leaves,cinnamon)
  • Pepper powder - 2tbsp crushed
  • Potato - 1 
  • Carrot -1
  • Green peas - 1/4 cup
  • Curry leaves -few 
  • Coconut Milk - 2 cup of thin milk (watered) and 1 cup of thick milk
  • Salt to taste 
The Preparation method:
  • Heat oil in a pan and add the whole garam masala,add onion ,green chilli,ginger garlic paste,curry leaves and salt.Sauté till the onions turn brown.  
  • Add the potato ,green peas and carrot and boil them with 2 cups of thin coconut milk 
  • Cover and cook till the potato and carrot is cooked .
  • Add pepper powder .Switch off the flame and add the thick coconut milk and mix well.
  • Now add the egg pieces slit in halves. 
  • Tasty Egg stew is ready to be served with Aapam or idiappam.
