Aviyal

Aviyal is a popular Kerala cuisine which is a must at weddings. Aviyal is very healthy as you can boil any multitude of vegetables without no frying involved. Personally , it is one of our favourite as it take very little preparation time and very yummy too!


What you need for Aviyal:
  • Carrot - 2 cut along the length into small pieces
  • Drumstick - 1 skinned and cut into pieces
  • Raw banana - 1 skinned and cut into pieces
  • Kovakka/Tindora - 12 cut into pieces
  • Beans - 12 12 cut into pieces
  • Ash gourd - 1/2 cut into pieces
  • Coconut - 1/2 chopped fine
  • Green chilli - 4 chopped fine ( according to spice level)
  • Cumin seeds - 1/2 tbsp
  • Jaggery - 1 piece(optional)
  • Curd - 1 cup beaten well
  • Turmeric powder - A pinch
  • Curry leaves - a few leaves
  • Salt to taste
Note : You can pick and choose the vegetables you like !

The preparation method:
  • If possible , cut all the vegetables to the same size. Take a cooking pan  and boil all the vegetables together along with little water,turmeric and salt till they are well cooked. Make sure they are not over-cooked and mashed.
  • Once the vegetables are well cooked , add the beaten curd and stir well.
  • Meanwhile,grind the coconut,green chilli and cumin/jeera seeds by adding very little water.
  • Add this grinded mixture to the pan.
  • Optionally , you can fry the curry leaves in coconut oil and add it to the Aviyal for added flavour.
  • Yummy and healthy Aviyal is ready to served as side-dish to rice.
