Vazhuthananga/Brinjal Theeyal

Brinjal theeyal is traditional kerala recipe prepared by cooking Brinjal with fried coconut paste & spices.

What you need to make Brinjal theeyal:
  • Vazhuthananga /Brinjal - 4 cut in to small cubes
  • Grated Coconut - 1/2 shell
  • Shallots - 10
  • Garlic pods - 4
  • Green Chilly - 2
  • Tamarind - 1 small ball
  • Chilli powder - 1 1/2 tbsp
  • Turmeric powder - 1/2 tbsp
  • Coriander powder - 1 tbsp
  • Curry leaves - few
  • Mustard seed - 1tbsp
  • Red chilli - 2
  • Salt to taste 
  • Sugar -1 tbsp (optional)
The preparation method:
  • Dry roast coriander powder,chilli powder ,turmeric powder for a minute.Then add grated coconut,  shallots, garlic, and curry leaves till it turns  brown colour.Let it cool and then grind it smooth.
  • Heat oil in a pan add shallots,green chilli ,curry eaves and salt.saute till the raw smell goes .Then add brinjal/vazhuthanga pieces.Saute for few minutes.Then add water and allow to cook.
  • Add the grinded mixture in to this . Mix well.
  • Add tamarind pulp and allow it to  boil  for 5 minutes.Finally add sugar. Switch off the gas.
  • Heat oil in a pan. Splutter mustard seeds, fry shallots,red chilli and curry leaves .Pour this in to the theeyal.
  • Tasty Brinjal theeyal is ready to be served with rice.
