Brinjal theeyal is traditional kerala recipe prepared by cooking Brinjal with fried coconut paste & spices.

- Vazhuthananga /Brinjal - 4 cut in to small cubes
- Grated Coconut - 1/2 shell
- Shallots - 10
- Garlic pods - 4
- Green Chilly - 2
- Tamarind - 1 small ball
- Chilli powder - 1 1/2 tbsp
- Turmeric powder - 1/2 tbsp
- Coriander powder - 1 tbsp
- Curry leaves - few
- Mustard seed - 1tbsp
- Red chilli - 2
- Salt to taste
- Sugar -1 tbsp (optional)
- Dry roast coriander powder,chilli powder ,turmeric powder for a minute.Then add grated coconut, shallots, garlic, and curry leaves till it turns brown colour.Let it cool and then grind it smooth.
- Heat oil in a pan add shallots,green chilli ,curry eaves and salt.saute till the raw smell goes .Then add brinjal/vazhuthanga pieces.Saute for few minutes.Then add water and allow to cook.
- Add the grinded mixture in to this . Mix well.
- Add tamarind pulp and allow it to boil for 5 minutes.Finally add sugar. Switch off the gas.
- Heat oil in a pan. Splutter mustard seeds, fry shallots,red chilli and curry leaves .Pour this in to the theeyal.
- Tasty Brinjal theeyal is ready to be served with rice.
Yours is the only theeyal I found which is exactly like my mom's.. excellent!!
