Vangi Bath

Vangi Bath or Eggplant Rice is very popular in Karnataka and is a complete meal in itself.

What you need to make Vangi Bath :
  • Brinjal - 5 cut into cubes
  • Onions - 2 finely chopped
  • Green Chillies - 2 slit
  • Rice - 1 cup
  • Turmeric Powder - a pinch
  • Coriander Powder - 2 tbsp
  • Chilli Powder - 1 tbsp
  • Cumin Powder - 1/2 tbsp
  • Garam Masala Powder - 1/2 tbsp
  • Coconut - 1 cup grated
  • Cashew Nut - 10
  • Curry leaves - a few
  • Urud Dal - 1/2 tbsp
  • Cumin Seed - 1/2 tbsp
  • Channa dal - 1/2 tbsp
  • Mustard Seed - 1/2 tbsp
  • Red Chillies - 2 
  • Asfoetida - a pinch 
  • Salt to taste
The Preparation Method:
  • Cook the rice and keep aside.
  • Fry the cashew nuts in ghee and keep aside.
  • Heat oil in a pan and splutter mustard seeds.Add the urud dal, channa dal , red chillies , asfoetida , curry leaves and temper for a minute.
  • Add the chopped onions ,green chillies and saute till the onions turn slightly brown.
  • Add the brinjal pieces and cook for a few more minutes with the lid on.
  • Add the turmeric,coriander,chilli ,cumin powder and salt. Mix well.
  • After a few minutes , add the grated coconut and mix well.
  • Cook with the lid on for about 5 minutes till the brinjals are soft and well cooked. Add little water, if required, to help it cook faster.
  • Switch off the gas and Add the cooked rice to this and mix well.
  • Garnish with the fried coconuts.
  • Tasty Vangi Bath is ready to be served with chips or appalam.
