Vangi Bath or Eggplant Rice is very popular in Karnataka and is a complete meal in itself.
What you need to make Vangi Bath :
- Brinjal - 5 cut into cubes
- Onions - 2 finely chopped
- Green Chillies - 2 slit
- Rice - 1 cup
- Turmeric Powder - a pinch
- Coriander Powder - 2 tbsp
- Chilli Powder - 1 tbsp
- Cumin Powder - 1/2 tbsp
- Garam Masala Powder - 1/2 tbsp
- Coconut - 1 cup grated
- Cashew Nut - 10
- Curry leaves - a few
- Urud Dal - 1/2 tbsp
- Cumin Seed - 1/2 tbsp
- Channa dal - 1/2 tbsp
- Mustard Seed - 1/2 tbsp
- Red Chillies - 2
- Asfoetida - a pinch
- Salt to taste
The Preparation Method:
- Cook the rice and keep aside.
- Fry the cashew nuts in ghee and keep aside.
- Heat oil in a pan and splutter mustard seeds.Add the urud dal, channa dal , red chillies , asfoetida , curry leaves and temper for a minute.
- Add the chopped onions ,green chillies and saute till the onions turn slightly brown.
- Add the brinjal pieces and cook for a few more minutes with the lid on.
- Add the turmeric,coriander,chilli ,cumin powder and salt. Mix well.
- After a few minutes , add the grated coconut and mix well.
- Cook with the lid on for about 5 minutes till the brinjals are soft and well cooked. Add little water, if required, to help it cook faster.
- Switch off the gas and Add the cooked rice to this and mix well.
- Garnish with the fried coconuts.
- Tasty Vangi Bath is ready to be served with chips or appalam.
