Paavakka fry

Paavakka/Bitter Gourd is probably one of the most disliked vegetable but it benefits to our overall health far outweighs its bitterness. This simple fry goes best with curd rice as the the sourness of curd makes up for the bitterness of Paavakka.


What you need for Paavakka fry:
  • Bitter gourd-1 chopped into small or circular pieces
  • Onion-1 chopped fine
  • Green chilli-2 slit
  • Red chilli-1
  • Curry leaves-few
  • Turmeric powder-a pinch
  • Chilli powder-1/2 tbsp
  • Coriander powder-1/2 tbsp
  • Mustard seeds-1/2 tbsp
  • Salt to taste
The preparation method:
  • Cut the bitter gourd cut into thin slices.Transfer into a bowl with salt and turmeric into it and keep it a side.
  • After some time , wash the bitter gourd pieces with water.Squeeze the excess water. This process will ensure some bitterness is removed.
  • Heat some oil in a pan.Add curry leaves,green chillies,ginger-garlic paste and sauté them for a min.
  • Now add the sliced bitter melon into it and saute them in low flame then add coriander powder,red chili powder saute them again and close it with a lid for 5-10 minute.
  • Now add sugar into it and mix.Let it fry till the bitter gourd changes its colour into golden brown and crispy.
  • Garnish with coriander leaves and switch off the flame.
  • Bitter but tasty Paavakka fry is ready to be served hot with curd rice.
