Payar (long beans) Upperi / Poriyal

Long Beans or Payar is very popular vegetable in Kerala. The poriyal or upperi is a very tasty side dish for rice.


What you need for payar upperi:
  • Payar-1/2 kg chopped into small pieces
  • Onion-1 chopped fine
  • Green chilli-2 slit
  • Curry leaves-few
  • Mustard seed-1 tbsp
  • Salt to taste
The preparation method:
  • Heat oil in a pan and splutter mustard seeds.Add onion,green chilli,curry leaves and salt
  • Saute till the onions turn slightly golden brown.
  • Add payar or long beans in to it.Sprinkle little water and allow them to cook
  • Switch off the gas when the payar is well done
  • Tasty payar poriyal or upperi is ready to be served with rice esp curd rice.
