The dish ‘pulissery’ is very popular in Kerala. Mambazha Pulissery is the original and authentic dish, prepared with ripe mangoes as its main ingredient. The pulissery is also, made using any one of these vegetables: – elavan (ash gourd), vellirika (from the cucumber family) and pineapple.
What you need for elavan/ash gourd pulisseri:
- Ash gourd-1 cup chopped
- Coconut-1/2 shell
- Greenchilli-2
- Cumin-1/2 tbsp
- Red chilli powder-1 tbsp
- Curd -1 cup
- Mustard seed-1/2 tbsp
- Red chilli-2
- Curry leaves-few
- Fenugreek -1/2tbsp
- Turmeric powder-1/2tbsp
- Salt to taste
- Boil the ash gourd pieces with turmeric powder,chilli powder and salt in water.
- When ash gourd is done add the curd.
- Grind the coconut with green chilli and cumin.
- Add the grinded coconut in to the curry.
- boil for some more time.switch off the gas.
- Heat oil in apan splutter mustard seeds and fenugreek seeds.add curry leaves and red chilli.
- pour the seasonings in to the curry.
- Yummy and easy ash gourd pulisseri is ready to be served with rice.
