Brinjal Fry

This is probably the simplest Brinjal / Egg Plant recipe.This dish can be made in a jiffy and goes excellently with rice and curry.

What you need for Brinjal fry:
  • Brinjal/Egg Plant-1 cut into thin round slices
  • Chilli powder-1 tbsp ( According to spice level)
  • Turmeric powder-1/4 tbsp
  • Rice powder-1 tbsp
  • Salt to taste
The preparation method:
  • Mix the rice powder,chilli powder,turmeric powder and salt.
  • Coat both sides of the Brinjal pieces with this powder mixture.
  • Heat sufficient oil in a wide frying pan and once the oil is heated well , drop the Brinjal pieces into it.
  • Fry both side of the baingan in a slow flame ( requires little patience) till the Brinjal is well cooked.
  • Place the fried Brinjal pieces on a tissue paper so that the excess oil is absorbed.
  • Tasty Brinjal Fry is ready to be served hot with rice and curry !
