Ghee rice / Neychoru

Ghee rice/ Neychoru is a Malabar delicacy,and is usually taken along with spicy veg/non-veg dishes. This is a very flavourful and rich dish. It's so easy, quick and yummy.


What You need for ghee rice:
  • Basmati rice-2 cup soaked in water for 30 minutes atleast
  • Ghee-3tbsp
  • Onion-1 chopped fine length-wise
  • Ginger-1 piece chopped fine
  • Garlic-2 pods chopped fine
  • Whole garam masala-a few pieces of cardamom,cloves,cinnamon,bay leaf
  • Raisins-2tbsp
  • Cashew-6
  • Fennel seeds-1/2tbsp
  • Salt to taste
The preparation method:
  • Heat 1 tbsp ghee in a pan. Fry half of the chopped onion till they turn golden brown. Keep aside. 
  • Fry the cashews and raisins separately and keep aside.
  • Add rest of the ghee to the pan and drop the whole garam masala ,fennel seeds,ginger and garlic. Fry for a while.
  • Add the soaked basmati rice and fry them for 5 minutes ensuring they are not burnt.
  • Add water and salt to the pan and allow the rice to cook. The usual ratio of rice to water is 1:2.If the water is not sufficient then add some hot water to pan and cover with a lid.
  • Once the rice is cooked,sprinkle the fried onion,cashew and raisins.Garnish with coriander leaves.
  • Yummy ghee rice is ready to be served with a spicy gravy.
