Ridge Gourd Masala

Ridge Gourd called Peenchingai in malayalam and Peerkangai in Tamil is a popular veggie in India.This veggie tastes very mild, sweet and never boring. Ridge gourd is also very healthy being low in saturated fat and cholesterol.

What you need to prepare Ridge Gourd Masala:
  • Ridge gourd - 1
  • Onion -1  finely chopped
  • Green chilli-2
  • Tomato-2 finely chopped
  • Ginger garlic paste - 1 tbsp
  • Chilli powder -3/4 tbsp
  • Coriander powder - 3/4 tbsp
  • Turmeric powder-1/4 tbsp
  • Mustard seeds-1/2 tbsp
  • salt to taste
  • Coriander leaves for garnishing

The preparation method:
  • Peel and cut the ridge gourd into small pieces.
  • Heat a pan with oil and splutter mustard seeds.
  • Add chopped onions ,green chilli ,salt and sauté till they turn into transparent.
  • Add ginger garlic paste and saute till the raw smell disappears.
  • Add chopped tomatoes and saute till they are well cooked.
  • Add chilli powder, coriander powder, turmeric powder and salt.
  • Sauté for a few seconds and now add the chopped ridge gourd pieces.
  • Combine well and cover with a lid and cook on low flame till the ridge gourd/peenchingai becomes tender.
  • Finally garnish with coriander leaves.
  • Ridge gourd/peenchingai masala is ready to be served hot with rice.
