Vegetable Pulao

If you are tired/ in a hurry/ falling short of ingredients for other dishes then look no further...Vegetable Pulao will come to your rescue.You can use either one or any number of vegetables, make it spicy or mild easily moulding it to suit your mood for the day. :-)


What you need for vegetable pulao:
  • Basmati rice-1 cup soaked in water for 30 minutes
  • Carrot-1 chopped into small round pieces
  • Potato-1 chopped into cubes
  • Green peas-1 cup
  • Beans-10 chopped fine
  • Onion-1 chopped fine
  • Green chilli-2 slit 
  • Mint-1/2 cup
  • Coriander leaves-1/4 cup
  • Whole garam masala- a few pieces each of cloves, cinnamon,bay leaves
  • Cumin-1/2 tbsp
  • Coriander powder- very little - optional
  • Cumin powder-1/4 tbsp
  • Pepper corn-1/2 tbsp
  • Chilli powder- very little - optional
  • Ginger garlic paste-1 tbsp
  • Salt to taste
The preparation method:
  • Heat some oil in a pan and drop the whole garam masalas.
  • Add the cumin seeds and the chopped onions.
  • Sauté the chopped onions till they turn slightly brown(not too much).
  • Add ginger-garlic paste and sauté some more.
  • Add the mint leaves and chopped coriander leaves. Mix well.
  • Add chilli and coriander powder if needed.
  • Add the chopped potato,carrot,beans and peas.
  • Optionally you can add a small amount of yoghurt.
  • Cook for 2 minutes.
  • Add the soaked basmati rice and add sufficient water(water to rice 2:1).
  • Cook till the moisture drains away and the rice is cooked.The vegetables would also have cooked well.
  • Add saffron colour if needed.
  • Tasty Vegetable Pulao is ready to be served hot with raita.
