Avalos Unda

No evening snack is complete without Avalos Unda. It is one of popular evening snacks from ‘God’s Own Country’ Kerala. Made of rice flour, Avalose Unda (Roasted Rice Balls) is perfect companion to a cup of tea or coffee and can be taken with mashed banana,sugar or honey. 

What you need for Avalosunda:
  • Raw rice -1/2 kg
  • Coconut - 2cups(grated)
  • Cumin seeds -1/4tbsp
  • sugar -1cup
  • Lemon juice-1tbsp
  • Ghee -1tbsp
  • Cardamom powder -1/2tbsp
  • Salt a pinch
The Preparation Method:
  • Soak the rice in water for some time. Drain and powder the slightly damp rice. Sieve the flour and mix it with grated coconut thoroughly in a bowl. Add cumin seeds and salt and mix well. Cover the bowl with plastic wrap and set aside for 3 hours.
  • Lightly roast this mixture on a heavy skillet with the flame turned to medium. Keep stirring continuously till the mixture turns golden brown. Remove from fire, cool and sieve to remove any lumps. Powder the lumps (if any) and roast again and then add to the prepared avalos powder. 
  • Mix sugar, water and lime juice in a pan and cook on low flame to one-third consistency. Remove from fire, add ghee and cardamom powder and mix well. Add this syrup to the avalos powder after it has cooled slightly. Mix well and shape into small balls. 
  • Roll the balls in avalos powder and store in an airtight tin.
