Palak and Corn Pulav is a healthy dish rich in iron. This is a very simple dish which can be prepared in quick time.

- Rice- 1 cup
- Palak/spinach -1 cup chopped
- Carrot-2 grated
- Corn-1/2 cup
- Onion-1 chopped
- Green chilli -2 slit
- Curry leaves-few
- Garlic- 4 pods
- Ginger -1 piece
- Whole Garam masala -1 piece each(cloves,cinnamon,fennel seeds,bay leaf,cardamom,aniseeds)
- Cashew nut -6 no
- Salt to taste
The Preparation method:
- Boil the rice with whole garam masala ,oil and salt.Keep it aside.
- Heat oil in a pan. Add cashew nuts,onion,ginger,garlic,green chilli ,curry leaves and salt.
- Saute till the onion turns brown,then add grated carrot,chopped spinach and corn.
- Sprinkle some water and allow it to cook. When it is done, add the cooked rice into it and mix well.
- Tasty and healthy Palak and Corn pulav is ready to be served.
