Lemon Rice

Lemon Rice is an essential and popular South Indian dish.It can be had for breakfast,lunch or evening tiffin.
It is a hit with  house wives as this dish is easy to prepare. We also use to pack this when we go long journeys as it does not get spoilt easily.

What you need for lemon rice:
  • Rice-1 cup
  • Lemon juice-2 tbsp
  • Cashew-4
  • Ginger-1 piece
  • Curry leaves-few
  • Green chilli-1
  • Red chilli-2
  • Chana dal-1/2 tbsp
  • Cumin-1/2 tbsp
  • Mustard seeds/jeera -1/2tbsp
  • Peanuts-6
  • Turmeric powder-a pinch
  • Hing-a pinch
The preparation method:
  • Cook rice and spread it on a wide plate.Allow to it cool.
  • Heat some oil in a pan and splutter mustard seeds.
  • Fry jeera,chana dal,cashew nuts,peanuts,ginger,chilli,curry leaves and red chilli for a while making sure that they are not burnt.
  • Add turmeric powder,hing,salt and lemon juice.Mix well.
  • Add the rice and mix well. Switch off the gas.
  • Garnish with coriander leaves.
  • Yummy Lemon rice is ready to be served hot!
