Vegetable Perattal

Vegetable Perattal is a popular Chettinad recipe which goes great with rice or chappati. Try this when you are in a mood for a different side-dish for chappati.


What you need for Vegetable Perattal:
  • Carrot-2 chopped fine
  • Potato-1 chopped fine
  • Beans-12 chopped fine
  • Small onion-10
  • Tomato-1 chopped fine
  • Fennel seeds-1/2 tbsp
  • Bay leaves-1
  • Cinnamon-1
  • Curry leaves-few
  • Red chilli powder-1tbsp
  • Turmeric powder -a pinch
  • Coriander powder-2tbsp
  • Coconut- a few pieces
  • Salt to taste
The preparation method:
  • Boil all the vegetables and keep aside.
  • Make a paste of the coconut pieces in a blender and keep aside.
  • Heat oil in a pan and crackle fennel seeds.add bay leaves and cinnamon.
  • Sauté small onions and curry leaves.When the  small onions turn slightly brown,add tomato.
  • when the tomatoes are well done add salt ,turmeric powder, chilli powder and coriander powder.
  • Add the coconut paste to this and mix well. Cook for few minutes.
  • Add the boiled vegetables and mix well.Cook for few minutes.
  • Tasty Vegetable Perattal is ready to be relished with rice or chapatti.
