Aloo Methi is a very classic Indian recipe where the potatoes are cooked along with the very aromatic fenugreek leaves.This is a popular Indian vegetarian recipe usually served with hot rotis.

- Onion - 2 finely chopped
- Potato-3 chopped
- Tomato - 2 finely chopped
- Green chilli - 2-3
- Ginger-garlic paste - 1 tbsp
- Methi leaves - 1 bunch , just the leaves - washed well
- Cumin / Jeera seeds - 1/2 tbsp
- Coriander powder - 1 tbsp
- Red chilli powder - 1 tbsp
- Turmeric powder - a pinch
- Garam masala - 1/4 tbsp
- Salt to taste
- Coriander leaves for garnishing
The preparation method:
- Heat some oil in a large pan and add cumin seeds.Fry for a few seconds and then add chopped onion and salt. Sauté till the onions turn golden brown.Add green chilli,ginger-garlic paste and saute for some more time till the raw taste of ginger-garlic paste goes away.
- Add chopped tomatoes and cook till the tomatoes are well done(add water if necessary).
- Add all the coriander ,red chilli ,and garam masala powders and mix well.
- Add the methi leaves and cook for a minute.
- Finally , add the potatoes and cook for 15 minutes till potatoes is well cooked.
- Garnish with coriander leaves. Hot and spicy aloo methi is ready to serve with rotis...
